Angular rock alone may be slope debris rather than stream gravel. A true old channel should show some evidence that water sorted the material. Do not start by digging a big hole in the easiest place. Start by asking where the old water would have been fastest, where it would have slowed, and where dense material would have stopped. Good first tests include the downstream side of old boulder lines, the inside edge of an abandoned bend, the bottom of a bench gravel exposure, and the deepest reachable layer above bedrock or clay. If bedrock is exposed nearby, test cracks, pockets, and the first few inches of gravel sitting directly on it.
Run small, controlled test pans from different layers instead of mixing everything together. One pan from surface gravel, one from mid-layer gravel, and one from the lowest reachable gravel can tell you whether the channel is worth more work. If the bottom layer has black sand and fine gold while the top layer is empty, keep testing downward and sideways. If every pan shows only light sand and no heavy-mineral concentration, move.
